Abstract
We embark on a journey through optics in dielectric media, inspired and guided by Fermat's Principle. We show how to modify the principle when dielectrics are moving non-uniformly and explain how the propagation of light in fluids is connected to phenomena in magnetism and in general relativity. Dielectric media may even serve to build artificial astronomical objects in an earthly laboratory.
